This spinach cauliflower and feta salad is a healthy lunch idea you can throw together very quickly!

This spinach cauliflower and feta salad is a super healthy lunch idea you can throw together very quickly! It is the perfect salad recipe for spring or fall when spinach, carrots and lettuce are in season!

It is easy to prepare, easy to customize with whatever you like and it’s easy to eat too! I had it with a spoon, because I didn’t want to skip on any beans or feta.

That said, you can totally skip on the beans if you don’t like beans. Most times I don’t add them at all to this salad, but I had some leftovers, so I threw them in there.

Now, you can make this salad during any season, but it is especially nutritious during spring or fall when spinach, lettuce and carrots are all in season and at their best! Plus they should be cheaper too, because of the abundance.

How To Make This Spinach Cauliflower Feta Salad

This recipe goes a bit beyond the usual instructions when it comes to making a salad (yes, I’m talking – add to a bowl and toss).

That’s because first we will saute the cauliflower and carrots with garlic, crushed red pepper and dried basil in some olive oil. For 2-3 minutes, stirring occasionally. If you want to you can do what I did and also add the beans to the pan in the last minute or so, but it’s not necessary. Once done, let cool off for 3-4 minutes before adding to the salad.

Chop the lettuce, spinach, onion, basil and add to a large bowl. Add in the pickled jalapenos, olives, the beans, cauliflower and carrot and finally the feta cheese. Add salt, pepper, olive or flax oil as well as lemon juice to taste and toss.
