This healthy tortellini salad is the lunch recipe you need right now. Especially when you’ve got some fresh tortellini in the fridge, but aren’t in the mood for pasta. Well, that probably never happens, forget the embarrassing part I just said. I mean, they’re perfect if you want to have tortellini, but also some fresh vegetables for the fiber, antioxidants, vitamins and minerals.

This salad kinda reminds me of Carbonara, but maybe I’m delusional. I haven’t had a carbonara in a while, so don’t count on it. However it is super filling and incredibly satisfying! I think the delusion comes from the addition of ham and Parmesan cheese I had leftover. You can also do chicken or whatever you want. Maybe even tuna. Whatever you have. That’s the motto with salads.

Tortellini Salad Ingredients
Refrigerated tortellini. I had some leftover from the night before and they were filled with a spinach ricotta filling. But any type of tortellini will do. Make sure to cook them according to the instructions on the package before adding to the salad.
Ham and Parmesan cheese. Now I did use the “healthier ham”, which I hear might also not be that healthy, so use whatever you like. Boiled chicken, tuna or even salmon can be great options as well.
Fresh herbs and vegetables. So I recently started gardening more, I’m beginner 2.0. I’d say and I used all the things I had harvested that day. Some tomatoes, a sweet green pepper, cucumbers and basil. Parsley or oregano will also be great here.
Avocado and onion. I had bought some of these and they are essential for the salad! They add more flavor, creaminess and fiber.
Olive oil, salt and pepper. I didn’t feel the salad needed a fancy dressing, but hey – if you’ve got a favorite type of dressing that’s also healthy – you can try it here!

How To Make A Tortellini Salad
Well, once you’ve cooked the tortellini according to package instructions, you’re almost done.

As with most salads, once you’ve washed and chopped everything you need, just add the ingredients to a large bowl and toss with salt, pepper, olive oil and if you wish – lemon or lime juice. I didn’t add any lemon juice.
