What’s In The Greek Chicken Bowls

Chicken. I used boneless, skinless chicken thighs and seasoned them with dried herbs and spices, then baked in the oven. You can also choose to prep the chicken on the stove – just sear on each side for about 7-8 minutes. Or you can make your life really easy and get rotisserie chicken to assemble these Greek chicken bowls even faster!

Sweet potatoes. I’m not gonna lie to you, I would’ve loved some fries or baked potatoes with this dish, but I only had one sweet potato when I made this. So that’s what I used. It’s best to roast them, but for a lower glycemic index – you can also serve with mashed potatoes or sweet potatoes (usually boiled foods have lower glycemic index, thus don’t raise your blood sugar as much).

Salad. Here go with whatever is in season in your area! I had lettuce, cabbage, carrots, scallions, radishes and so I put them all into this salad. You can do cabbage and carrot salad, Greek salad or a simple tomato cucumber salad like this one.

Tzatziki and Red pepper hummus. You can either make your own or buy it from the store. Whatever you do, you want to have only simple whole food ingredients and no sugar added (they do that to hummus). I personally made the tzatziki (took 2 minutes) and bought the red pepper hummus.

Olives. Use whichever type of olives you have! Lucky for me, I love all types, but especially green. And I had some grilled green olives in the fridge – SCORE! So I used those, feel free to use whatever you have in your kitchen.

How To DIY The Greek Chicken Bowls

So this is how I made the Greek chicken bowls and it’s not the only way. Check for easy customization below.

how to make

  • Season the boneless skinless chicken thighs with mint, garlic, olive oil, chili powder, lemon juice, curry powder, salt and pepper. Just add all these things to bowl and rub the chicken to get coated evenly with the spices.
  • Peel and cut a sweet potato, then mix it with some olive oil and salt.
  • Preheat the oven to 180C/350F.
  • Spread the potatoes and chicken over an appropriate-sized baking sheet with 1/2 cup of water. Cover with a lid or another sheet of the same size. Then bake for about 30 minutes, flipping once. Then uncover and turn the heat up to 220C/440F and bake for 15 more minutes, flipping once.
  • While that’s cooking, you have time to either clean or make the rest of the ingredients for the Greek chicken bowls. So, chop vegetables for the salad and give it a toss, then make the tzatziki.
  • Once the chicken and sweet potatoes are done, take them out, cut the chicken into bite-sized pieces and assemble the bowls.
  • Start with the salad, then the sweet potatoes, some chicken, then the tzatziki, red pepper hummus and some olives.
  • Your delicious healthy dinner is ready to enjoy!

How To Customize It and Make Life Easier

If you don’t have an ingredient or don’t like some of the ingredients, you can easily switch things up! Here are some examples to customize these Mediterranean bowls and to make life easier:

  • Pan-sear or grill the chicken and make mashed potatoes or no potatoes at all. This will save you about 20-30 minutes and is perfect for a summer barbecue!
  • Buy a rotisserie chicken and use that instead of cooking your own. This is another way to save more than 30 minutes! The bowls will be making themselves, no AI needed.
  • Stir-fry or grill peppers, zucchini and eggplant instead of the sweet potatoes. This will make the recipe also lower in carbs.
  • Make any kind of salad you wish! Use seasonal vegetables to make it more nutritious! Some of my favorites here include this chickpea salad, tomato cucumber salad, red cabbage slaw, simple lettuce salad or this amazing detox salad with arugula and avocado.
  • Use whichever type of dips/ sauces you love or have! Tzatziki and hummus are my favorite, but red pepper dip, zucchini in garlic sauce or avocado dill sauce would also be tasty!

Meal Prep

If you wish to meal prep these DIY Greek chicken bowls, store all the different parts in different airtight containers in the fridge for 3 to max 4 days.

how to store

I usually store the tzatziki and hummus in glass jars and the chicken and potatoes in another container, so that I can reheat them in the oven in 5-6 minutes. Then assemble with whatever salad you wish.
