How To Use It
Well, in curries! I used one batch two or three times to make chickpea curry with cashew milk (since I didn’t have coconut milk) and you can also use it to spice up soups or any type of stews. It will go really well with lentils or tofu as well.
I highly recommend combining the curry paste with some lemon grass or lime leaves, because these help to lighten things up.
Make sure to store in a small airtight container (a small recycled jar did it for me) in the fridge and use up within 3 days. Otherwise, you can also freeze it for longer.
