It is broccoli season and I think we should all eat more of it. Well, that’s what I tell myself every time I see this green vegetable in the fridge while reaching for something else. If I’m quiet enough, I sometimes hear it let out a sigh.

“Sorry, it’s not your time, broccoli. You’re just not yellow enough yet.”

And I buy the three broccoli heads on sale with the best intentions.

“This week, I will eat so much broccoli and I’m excited because it’s full of vitamin K, C, folate, fiber, protein, magnesium and those anti-inflammatory, detoxifying and anti-cancer sulfur compounds everyone’s talking about“.

Well, later, somehow those things mean nothing to me. I procrastinate on that broccoli as if it’s organizing my drawers or cleaning up.

With stories like these, no wonder the last comment I got was, and I quote:

“I don’t want to read your novels, get to the recipe. Fuck you”

Okay, at this point, we’re all wondering when am I going to get to the part where I tell about why you should make this broccoli soup and not throw that tree-looking cruciferous vegetable in the garbage. Or bury it in your backyard like I do with the peels and other produce leftovers. It’s my version of compost.

Well, make this broccoli soup, because it’s good and it’s healthy and it tastes wonderful. Trust me I will buy broccoli again. And cabbage and cauliflower. And I’ll make things like this soup. Very likely it will be this exact soup.

These vegetables do make us healthier and they’re delicious and cheap. Especially in soups, stews and stir-fries and sometimes I like them in salads as well. So, yes, eat more of them. Even if you think you don’t feel like it right now, once you have some – you will realize having it’s actually good. And having something healthy was a good decision after all.

How To Make This Easy Broccoli Soup

Step one. Prepare your ingredients. That means wash the broccoli, break into florets. Then peel the potatoes and the onion and chop them as well. The chopping doesn’t need to be thinly or professional, as we’re going to puree everything in the end anyway.
